For Punjabis the main food is made of wheat along with maize. All vegetarian and non vegetarian dishes are consumed with naan, rotis, parathas and they are made of wheat or maize. Rice is consumed only occasionally and that too seldom plain. It’s mostly made with cumin or and fried onions. Rice is often served with curd curry or kidney beans (Rajma).
Punjabi foods include a lot of spices like cardamom, cumin seeds, black pepper, cloves etc.
One of the famous methods of Punjabi cooking is using the Tandoor. This is a cylindrical oven made of clay. Tandoori dishes are now known all over the country.
Sarson ka saag, makhe di roti are two very well known Punjabi food. Sarson ka saag is made of mustard leaves with very little spices. Makhe di roti is made from maize.
Punjabi cooking also includes a lot of dishes of dals made from pulses like black gram, Bengal gram and green gram. Cooked with spices, milk cream on slow fire these tasty dishes take a long time to cook. Punjabi dishes have a lot of non vegetarian fare like Butter Chicken, Murg Makkai, Achari Mutton etc.
Milk is one of the most favored Punjabi items. Punjabis use milk products for Phirni a sweet dish, making lassi a very cool drink salty or sweet. Then there is paneer made from milk. It’s used in vegetarian food like Makhani Paneer, Paneer Taash Kabab and Kadhai Paneer.
Another of Punjabi dish is the Rao Ki Kheer made from rice and sugarcane juice.
